تفاوت کیک اسفنجی با ساده
کیک اسفنجی در درجه اول با تخم مرغ و کمی شکر و آرد تهیه می شود. این باعث می شود این کیک هم سبک باشد و هم خوشبو و محکم و جاذب. بنابراین ، کیک های اسفنجی برای پخت و پز یا پر کردن میوه های سنگین مناسب هستند.
سایر کیک ها معمولاً برعکس هستند – تخم مرغ کمتر و آرد بیشتر. این باعث ایجاد بافت متراکم تر می شود که به همان اندازه جاذب نیست.

این کیک مناسب برای تهیه چند روز قبل است. می توانید به مدت چند روز بر روی پیشخوان در یک محفظه در بسته نگه دارید. یا می توانید آن را تا یک هفته در یخچال نگهداری کنید . همچنین می توانید این کیک را تا 3 ماه فریز کنید. فقط مطمئن شوید که آن را در یک جعبه تخت ذخیره کنید تا شکل خود را از دست ندهد! نحوه نگهداری کیک در فریزر بصورت کامل در این مقاله آموزش داده شده است
مواد لازم: 3 عدد تخم مرغ 100 گرم شکر 100 گرم آرد مقدار اندکی نمک 2 گرم بیکینگ پودر آرد بادام 25 گرم 20 گرم کره
طرز تهیه :
1. آرد بیکینگ ، بیکینگ پودر و آرد بادام را در یک کاسه مخلوط کنید
2. سفیده را از زرده تخم مرغ جدا کنید.
سفیده را با یکم نمک با مخلوط کن مخلوط کنید تا کف کند ، سپس نیمی از شکر را اضافه کنید و یک بار دیگر مخلوط کنید تا سفت شود
3. زرده تخم مرغ را با نیمه دیگر شکر مخلوط کنید تا یک مایع زرد روشن بدست آید.
4. 1/3 مخلوط سفیده را با مخلوط زرده تخم مرغ مخلوط کنید ، سفیده را با دقت به زرده تخم مرغ اضافه کنید.
5. مواد پودر شده را در 2-3 مرحله به مخلوط تخم مرغ الک کنید ، با دقت آنها را درون آن با لیسک قاطی کنید.
6. کمی کره به دمای محیط رسیده را به کره ذوب شده اضافه کنید ، آنها را با هم مخلوط کنید و سپس آن را با مابقی خمیر به کاسه اصلی اضافه کنید.
7. بقیه مرنگ را اضافه کرده و خمیر را به صورت دایره ای ورز دهید.
8. خمیر را به حلقه کیک بلند 16 سانتی بریزید و آن را در دمای 160 درجه سانتیگراد به مدت 40-50 دقیقه بپزید
