طرز تهیه کیک بستنی در خدمتتون هستم که مناسب این روزهای گرم تابستون هست
کیک بستنی چیست؟
کیک بستنی( Ice Cream Cake) به ترکیبی از کیک و بستنی همراه هم گفته می شود مستقل از اینکه نسبت کیک به بستنی آن بیشتر است یا برعکس. ترکیب کیک با سردی بستنی، علاوه بر کاهش میزان سرمای بستنی خالص، خوردن کیک را لذت بخش تر می کند. کیک بستنی می‌تواند از بستنی سخت و یا طبقاتی از بستنی و کیک تشکیل شده باشد و نمای ظاهری آن به صورت کیک بزرگ و یک‌پارچه و یا کیک لایه‌دار باشد.
کیک بستنی سخت و نرم
در کیک بستنیِ سخت، لایه‌های بستنی می‌تواند تمامی کیک را تشکیل دهد و یا تا حدی که آب نشود بین طبقات مختلف کیک قرار بگیرد
در کیک بستنیِ نرم، به منظور پوشش دادن کیک، از کرم بستنی استفاده می‌شود. هم‌چنین این نوع کیک، می‌تواند کیک سنتی تزیین شده توسط کرم بستنی و نیز از سایر مواد مورد استفاده در صنعت شیرینی‌سازی باشد.
نوع متداول‌تر این نوع کیک، عبارت از کیکی با سه لایه است، یکی از لایه‌ها از کیک تشکیل می‌شود، لایه‌ی بعدی بستنی بوده و لایه‌ی سوم کیکی است که سطح آن نیز به بستنی آغشته می‌باشد.
کیک بستنی
مواد لازم :
تخم مرغ : ۴ عدد
آرد : ۱۰۰ گرم
شکر : ۱۰۰ گرم
بیکینگ پودر : ۱ ق مرباخوری
وانیل : نصف ق چایخوری
بستنی : نیم تا یک کیلو
گیلاس، آلبالو یا توت فرنگی : ۱ لیوان (به دلخواه)
در صورت تمایل برای برای گاناش :
خامه صبحانه : ۱۰۰ گرم (نصف بسته)
شکلات تخته ای : ۱۰۰ گرم
طرز تهیه :
این کیک چون در فریزر نگهداری میشه باید کیکی باشه که یخ نزنه و سفت نشه. یه کیک اسفنجی مناسب این کیک هستش.
ابتدا زرده و سفیده ها رو جدا کرده و سفیده رو ۱۵ دقیقه در فریزر میذاریم تا خوب سرد بشه. بعد آرد و بیکینگ پودر رو ۳ بار الک میکنیم و زرده ها و وانیل رو باهم مخلوط و کنار میذاریم.
سفیده ها رو با همزن زده و مقداری که کف کردند، شکر رو کم کم روی سفیده ریخته و هم میزنیم تاحدی که وقتی ظرف رو برعکس میکنیم نریزه. بعد مخلوط زرده و وانیل رو اضافه و با دور کند همزن مخلوط میکنیم.
حالا همزن رو کنار گذاشته و مخلوط آرد رو در سه مرحله به مواد اضافه و آرام و بصورت دورانی هم میزنیم که پف سفیده ها نخوابه.
کف قالب ۲۰ سانت کاغذ روغنی انداخته و مواد رو درونش میریزیم و در فری که از یکربع قبل روشن کرده ایم گذاشته و با درجه حرارت ۱۸۰ به مدت ۳۵ تا ۴۰ دقیقه میپزیم.
با خلال دندون وسط کیک رو امتحان میکنیم و اگه تمیز بیرون اومد کیک پخته شده. کیک رو میذاریم خنک بشه بعد از وسط برش میدیم.
*بستنی رو اگه پاستوریزه انتخاب کنید خیلی بهتره چون بستنی سنتی ثعلب داره و کش میاد. مقدارش هم دست خودتونه من یک کیلو گذاشتم*
بستنی رو در دمای محیط میذاریم نرم بشه بعد به دلخواه گیلاسها رو تیکه ریز کرده و با بستنی مخلوط میکنیم. سپس توی همون قالب کیک، کیسه فریزر میندازیم و بستنی رو در قالب ریخته و در فریزر میذاریم تا سرد و سفت بشه ولی یخ نزنه که وقتی لای کیک میذاریم بهش بچسبه.
بعد از قالب درآورده و روی لایه اول کیک قرار میدیم و لایه بعدی کیک رو روش گذاشته و دوباره در فریزر یه مدت ۵ تا ۶ ساعت قرار میدیم تا بستنی یخ بزنه و قابل برش باشه.
به دلخواه برای تهیه گاناش خامه رو روی حرارت میذاریم. گرم که شد (جوش نزنه) شکلاتها رو بهش اضافه کرده و هم میزنیم تا یکدست بشه. صبر میکنیم تا خنک بشه بعد روی لایه بالایی کیک میریزیم و با کاردک از کناره ها جمعش میکنیم. (میتونین هم بذارین از کیک سرازیر بشه).
کیک رو دوباره در فریزر گذاشته و نگهداری میکنیم و زمان سرو از فریزر درآورده و تزیین میکنیم.
